the Future of Salento olive growing

Our EVOO is born in Salento, a land thet has lived in symbiosis with the olive tree for centuries

In recent years this landscape has changed profoundly.

We have chosen to meet that transformation not with nostalgia, but with commitment.

We have invested in regenerating our groves, planting cultivars able to preserve the region's agricultural heritage and to ensure sustainable olive growing for generations to come.

Today our groves are home to three varieties that embody tradition, research and innovation: Leccino, FS-17 Favolosa and Lecciana.

Three different cultivars, united by the same calling: to produce an extra virgin olive oil of absolute excellence.

Leccino

One of the most emblematic varieties of Italian olive growing, the Leccino is prized for its elegance, its adaptability and the consistent quality of its harvests. Its olives yield a harmonious, refined oil marked by a delicate fruitiness, grassy notes and a natural balance between bitter and pungent.

It is a cultivar that expresses the character of Salento with quiet restraint, offering a taste profile that wins you over with its finesse and aromatic clarity.

FS-17 Favolosa

The FS-17 Favolosa is one of the most significant achievements of Italian olive research. Selected for the high quality of its yield and its natural tolerance to Xylella fastidiosa, it has become one of the symbols of Salento's olive-growing renaissance.

It produces an oil with a more intense fruitiness, rich in green aromas, with notes of fresh grass, olive leaf and almond, carried by a pleasing balance between bitter and pungent and a remarkable wealth of natural polyphenols.

Lecciana

The most recent arrival in our groves is already looking to the future.

Lecciana is a new-generation cultivar, born where scientific research meets farming tradition. It stands out for the high quality of its oil, its steady productivity and its ability to adapt to the changing needs of Mediterranean olive growing.

Its introduction marks a further step in our estate's journey of renewal: to invest today is to safeguard the landscape, the work and the culture of tomorrow's oil.
