In the heart of Lecce's province, in the little village of Supersano, Azienda Agricola Cesare Vergari tends over 200 hectares of olive groves — a heritage of young and centuries-old trees whose roots run deep into the history of Salento.

Our extra virgin olive oil comes exclusively from the fruit of these trees, tended with sustainable methods and full respect for nature. For us, quality begins with the land: only by caring for every tree with patience and attention can we offer an oil that is genuine, healthy and of the very highest level.

We love and defend our origins and our calling for olive growing. That is why, despite the devastation of the Xylella bacterium, today we cultivate resistant varieties perfectly suited to the Salento land — preserving tradition and strengthening our bond with our roots each day.

A passion handed down, an oil you can trust

Too often, oil of foreign origin reaches Italian shelves and tables sold as “Italian”, far from true quality. We believe in another way — transparent, authentic, traceable. Ours is one of the few estates that still places family bonds at its heart, guarding a tradition more than forty years long.

In every drop there is all of this: work, respect for nature, a bond with our roots — a balance we defend each day, in a world where tradition and authentic relationships risk disappearing. Our goal is simple yet ambitious: an oil that speaks of originality, quality and truth, telling the real Made in Italy through the authentic taste of our land.

Salento, shaped by sun, sea and wind

Here, in the green heart of Salento, our estate rises in the small hillside village of Supersano — little more than four thousand souls, wrapped in centuries-old trees, sunlit fields and deep silence. Here nature still reigns, watched over by two parks of rare beauty: the Parco Naturale della Serra and the Parco dei Paduli.

They guard a precious ecosystem of ancient olive trees, native species and a biodiversity that makes this one of the most enchanting corners of southern Italy — where growing olives is far more than a tradition: it is a heritage to protect.

Because every drop of our oil tells a story of Salento, of Family, and of respect for nature.

Our extra virgin

Pure, from Salento, unmistakable

A premium extra virgin obtained exclusively from Leccino and FS-17 Favolosa olives, harvested at the right ripeness with mechanical shakers — in full respect of the extra-virgin protocol — and milled without delay in our own mill. Pressing takes place at a controlled temperature, always below 27 °C: a choice that lowers the yield but guarantees a purer oil, rich in aroma.

A gentler oil, from Salento's native trees

Speaking of Salento, we cannot forget Virgin Olive Oil, pressed from the native cultivars now almost lost to Xylella — a softer, rounder oil for those who love a milder, balanced taste. Far from a by-product, it is drawn from the olives by mechanical means alone, with no chemical refining; it differs from extra virgin only in its free acidity, a technical detail imperceptible on the palate.

It remains the tradition of a few small producers who patiently tend their ancient, ailing groves — keeping alive the oil this land has always made.
