It was founded in Supersano, in the heart of Salento.

It all began in the 1970s, when Cesare Vergari took his first steps in olive growing. In 1982 he built the family’s first mill, giving life to a dream of dedication, care and love for the land.
In 2009, as the baton passed to his children, the Cesare Vergari brand was officially born. Today Massimo and Maria lead the business, alongside a team of trusted collaborators.

Our extra virgin is made from Leccino and FS-17 Favolosa olives, mechanically harvested at the right ripeness and milled in our own mill.
The utmost attention to every detail, in the production and processing phases, allows us to obtain an extra virgin olive oil of the highest quality and with exceptional organoleptic properties.
For this reason, in our EVOO, you will find all our passion and the essence of a land rich in traditions, which continue to amaze, just like our olive oil in every taste.

Salento, a marvellous land known for centuries for its history, its crystal-clear sea, its colours, its scents and its landscapes such as the vast expanses of olive trees.
The Cesare Vergari farm was born right in the heart of this perfect ecosystem, in the small village of Supersano, a magical place on a hillside where the landscape is dominated by olive groves, nature parks and numerous animal and plant species that embellish the Salento flora and fauna.
In this rural setting, the Vergari family has been committed to producing high quality olive oils for more than forty years.
